Sweet Potato Casserole Recipe

Ray Glend prepared this Sweet Potato Casserole at our November 10th, 2018 Holiday Entrées cooking class, held at the Science of Spirituality International Meditation Center in Lisle, Illinois.

Ingredients

 4 large sweet potatoes
 3 Gala apples (or any sweet baking apple)
 ¼ teaspoon Himalayan salt
 8 Medjool dates (soaked and chopped)
 1 teaspoon vanilla extract
 1 teaspoon cinnamon
 ¼ teaspoon allspice
 ½ teaspoon ginger

Instructions

Preheat oven to 375 degrees F.

Steam or bake sweet potatoes until tender. Cool, peel, and mash in a large mixing bowl.

Peel and quarter apples. Steam until soft. Mash, add to potatoes. Mix in salt, dates, vanilla, cinnamon, allspice, and ginger. Stir until smooth.

Place mixture into a parchment-lined baking dish. Bake for 30 minutes.
