Scrumptious Fried Tofu with Green Beans and Chorizo recipe

Araceli Flores whipped up this extraordinary “meaty” dish at our March 16, 2019 cooking demo held at the Science of Spirituality International Meditation Center in Lisle, Illinois.

Ingredients

 8 ounces extra firm tofu
 2 teaspoons garlic powder, divided
 1 tablespoon soy sauce
 ½ cup sliced green beans
 2 tablespoons vegetable oil, divided
 2 to 3 tablespoons finely chopped onion
  cup sliced soy sausage
 8 Tortillas or toast of choice
Note
 For a gluten-free option, use tamari wheat free soy sauce and soy sausages without vital wheat gluten.

Instructions

Rinse and drain tofu. Using your hands, crumble tofu into small pieces in a bowl. Season with 1 teaspoon of the garlic powder and soy sauce, set aside to marinate.

Steam green beans for about 5 minutes, until almost cooked (still crunchy), drain.

Heat 1 tablespoon of the oil in a skillet over medium heat. Add onion, sauté for 4 minutes, add green beans and remaining teaspoon of garlic powder. Cook for another 4 minutes. Set aside on a plate.

Using the same skillet, heat remaining tablespoon of oil, add the soy sausage and fry for 5 minutes, stirring occasionally. Add tofu mixture, reduce heat to low. Cook for 5 minutes, stirring frequently. Transfer to serving bowl, mix in the green beans.

Serve with tortillas or toast.
