Scrambled Tofu

Lacto Vegetarian Nut Free

Yield: 2 servings

2 tablespoons butter or olive oil
½  teaspoon turmeric
 2 tablespoons minced fresh onion or ¾ teaspoon onion powder
12 ounces firm tofu, coarsely crumbled and drained
Salt and black pepper to taste
 Optionals:
 ¼  cup sliced fresh mushrooms
 ¼  cup diced red or green bell pepper
 ¼  cup sliced vegetarian sausage or vegetarian hot dog
 2 tablespoons cream cheese
 ¼ cup shredded Cheddar cheese

A fast and reliable standby that makes an appealing high-protein meal. Scrambled tofu lends itself to many variations and is delicious when served in a pita bread or on toast.

Melt butter in a skillet over medium heat. Stir in turmeric. Add onion and your choice of mushrooms, bell pepper and vegetarian sausage or hot dog. Saute 3 minutes, stirring occasionally. Add tofu and stir gently until well mixed and heated through. Add cream cheese and/ or Cheddar cheese if desired. Cook and stir until cheese is melted. Season with salt and black pepper.
Note: You can experiment with a variety of items to be added to the Scrambled Tofu such as chopped broccoli, shredded zucchini, seasoned beans, etc. The addition of cream cheese gives the tofu creamy texture.
Note: Canned or frozen vegetarian sausage or hot dogs prepared without any animal products are carried by most natural food store.
