Enjoy a slice of this delicious tea cake and fill your home with the sweet smell of warming spices.

Ingredients

 ¼ cup plant-based milk
 2 tablespoons loose black tea leaves or 1 tea bag
 2 large or 3 medium bananas, mashed
 2 tablespoons ground flaxseeds
  cup coconut oil, melted
 ¼ cup rolled oats plus extra for topping
 ¼ cup coconut sugar (plus 2 tablespoons for extra sweetness)
 1 teaspoon baking soda
 ½ teaspoon baking powder
 ½ teaspoon ground ginger
 ½ teaspoon ground cardamom
 Pinch ground cloves
 1 ½ cups gluten-free all-purpose flour
 2 tablespoons chopped nuts (walnut, pecan, or pistachio)

Instructions

Preheat oven to 350 F. Grease a 9×5-inch baking pan and line with parchment paper.

Warm milk, add tea, and steep 2 minutes. Strain.

In a large bowl, combine mashed bananas, ground flaxseeds, milk-tea mixture, and coconut oil. Mix well.

In another bowl, combine rolled oats, sugar, baking soda, baking powder, ginger, cardamom, and clove. Using a
wooden spoon, add this dry mixture to the banana mixture. Do not overmix. Lastly, add the flour. Gently mix until
combined.

Pour mixture into parchment-lined baking pan. Top with rolled oats and nuts.

Bake 40 to 50 minutes, until toothpick comes out clean. Check after 35 minutes, and then every 5 minutes.

Cool before slicing.
