Lentil Millet Sweet Potato Burger

Filled with whole food goodness, this burger will please family and friends alike. It is moist yet firm and will work well as a sandwich or served as a side dish.

 1 cup cooked lentil
 1 cup cooked millet
 ½ cup quick oats
 2 tablespoons bread crumbs (regular or gluten-free)
 ½ cup cooked sweet potatoes
 ½ cup finely diced onions
 1-3 cloves minced garlic
 ½ cup broccoli, finely diced
 ¼ red bell pepper, finely diced
 1 teaspoon oregano powder
 ¼ teaspoon cumin powder
 ½ teaspoon turmeric powder
 1 teaspoon salt (or to taste)
 a dash of cayenne powder (optional)

Preheat oven to 400° F.

Combine all ingredients in a bowl. Using your hands, gently mix to create a dough. Form into patties.

Place on parchment paper sheets or a silicon mat.

Bake 10-12 minutes until patties are a bit crispy around the edges. Remove from oven and flip. Continue to bake for 8-12 minutes or until patties feel firm.

Add toppings and condiments of choice.

Note: Bake or steam sweet potatoes to cook. Do not boil as this dilutes the flavor.
