Indian potatoes and cauliflower Recipe

A touch of turmeric brings a golden glow to this satisfying Indian specialty, called Aloo-Gobi Subji.

Ingredients

 1 medium-sized cauliflower
 4 medium-sized potatoes, peeled
 ½ teaspoon ground turmeric
 1 ½ inch piece of fresh ginger, finely chopped
 ¼ teaspoon whole cumin seeds
 ¼ teaspoon ground coriander or 1 teaspoon chopped fresh
  cup cold-pressed vegetable oil
 2 tomatoes, chopped (optional)
 1 teaspoon salt or to taste
 1 cup water
 Garam masala
Note: Garam masala is mix of spices commonly used in Indian cooking. You can often find it in larger grocery stores and, of course, in Indian specialty shops.

Instructions

Cut cauliflower into bite-sized chunks and cut potatoes into 1-inch cubes.

In a large heavy pot sauté turmeric, ginger, cayenne pepper, cumin and coriander in the vegetable oil for 3 minutes. Add tomatoes, potatoes, cauliflower, and salt. Stir to mix. Add the water. Bring to a boil.

Cover and simmer over low heat for 30 minutes or until vegetables are tender. Sprinkle with garam masala. Serve with rice.
