Aloo Gobi Sabzi (Potatoes and Cauliflower)

Indian-Potatoes-and-Cauliflower
A touch of turmeric brings a golden glow to this satisfying Indian specialty.

Ingredients

 1 medium-sized cauliflower
 4 medium-sized potatoes, peeled
 2-3 tablespoons cold-pressed vegetable oil
 ½ teaspoon ground turmeric
 1 ½ inch piece of fresh ginger, finely chopped
 ¼ teaspoon cayenne pepper, or to taste
 ¼ teaspoon whole cumin seeds
 ¼ teaspoon ground coriander
 2 tomatoes, chopped
 1 teaspoon salt or to taste
 1 cup water
 Garam masala
Garnish
 Fresh cilantro

Instructions

Cut cauliflower into bite-sized chunks and cut potatoes into 1-inch cubes.

In a large heavy pot place vegetable oil and turmeric, ginger, cayenne pepper, cumin, and coriander. Heat ingredients on a medium flame and sauté for 3 minutes.

Add tomatoes, potatoes, cauliflower, and salt. Stir to mix.

Add the water. Bring to a boil.

Cover and simmer over low heat for 30 minutes or until vegetables are tender.

Sprinkle with garam masala and garnish with fresh cilantro. Serve with rice.

Note: Garam masala is a mix of spices commonly used in Indian cooking. You can often find it in larger grocery stores and, of course, in Indian specialty shops.
