German Potato Salad

For many decades Germany has shared delectable potato recipes with the world. Variations on this salad, which can be served warm or cold, are some of the most popular.

Ingredients

 5 large potatoes
 1 medium-sized mild-flavored onion, finely chopped
 1 teaspoon sugar
 ¼ cup salad vinegar
 ½ cup vegetable broth
 1 tablespoon vegetable oil
 ½ teaspoon salt or to taste
 Freshly ground black pepper to taste
 ½ cup chopped sweet pickles
 2 tablespoons dairy or non-dairy sour cream
 1 teaspoon prepared mustard
Garnish
 Fresh parsley sprigs

Instructions

Boil potatoes in water until tender, but slightly firm. Drain and let cool completely.

Remove potato skins. Cut potatoes in half lengthwise, then into ¼-inch slices.

Mix remaining ingredients together in a large bowl. Add potatoes and toss gently. Serve chilled or warm.
