Veggie Pizza

A display of garden vegetables lends appeal to this colorful pizza. For a gluten-free version, look for a prepared crust in the freezer section of larger grocery stores.

Ingredients

 1 12- or 14-inch pizza crust
 ¾ cup marinara sauce
 5 ½ cups shredded mozzarella cheese, dairy or nondairy
 1 cup sliced fresh mushrooms, trimmed
 ½ cup thinly sliced fresh zucchini
 1 medium-sized tomato or 1 cup cherry tomatoes, thinly sliced and drained on paper towels
 ½ green, yellow, or red bell pepper, thinly sliced (optional)
 ½ teaspoon crumbled dry basil
 ½ teaspoon crumbled dry oregano
 1 tablespoon olive oil
Garnish
 Olives and fresh basil leaves

Instructions

Use a prepared pizza crust and prebake if instructions indicate. Preheat the oven to 400ᵒ F. to bake the finished pie.

Spread marinara sauce over pizza crust, leaving a ¾-inch border uncovered around the outer edge. Sprinkle cheese over sauce. Arrange vegetables over cheese and
sprinkle with basil and oregano. Drizzle olive oil over the top.

Bake for about 15 minutes until crust is golden and cheese is well melted.

Variation: For a Garden Tofu Pizza, substitute 1½ cups crumbled or diced, well-drained, firm tofu for the mozzarella cheese.
