Get creative with this fun, open-ended recipe, choosing a variety of colorful vegetables. The kabobs are delicious served as an appetizer with a creamy ranch or onion dip.

Ingredients

 Avocado
 Green or red bell pepper
 Small fresh or canned mushroom caps
 Fresh tomato
 Cucumber
 Zucchini
 Artichoke hearts
 Whole or sliced pitted olives
 Cheese (dairy or non-dairy)
 Italian dressing of your choice for marinating
 Creamy ranch or onion dip for serving, if desired

Instructions

Select vegetable quantity to match the number of skewers you are using. Cut all vegetables into bite-sized chunks or slices, for skewering onto long (3 inches or more) party toothpicks. If using cheese, cut into cubes and refrigerate.

Place vegetables side by side in a shallow dish or on a platter. Drizzle a generous amount of Italian dressing over top, and turn vegetables to coat. Let marinate atleast 1 hour.

Remove cheese from refrigerator. Spear vegetables and cheese on each pick. Use cheese or a firm vegetable to hold vegetables on tightly. If you use the same pattern on each kabob, they will arrange attractively on your serving tray.
