Cucumber Cooler

Try this refreshing drink on a hot summer day or any time.

Ingredients

 1 medium-sized cucumber, peeled, cut into chunks
 2 cups tomato juice
 ½ ripe medium-sized avocado, cut into chunks
 1 tablespoon vinegar
 1 tablespoon olive oil
  teaspoon salt
 Pinch of fresh basil
 6 ice cubes
Garnish
 Lemon wedges

Instructions

Purée all ingredients except ice cubes in a blender. Add ice slowly while blender is running. Continue processing until smooth. Serve at once, garnished with a wedge of lemon on rim of glass.
