Coconut Covered Morsels

½ cup raisins or date pieces
½  cup boiling water
2 tablespoons molasses or honey
6 tablespoons peanut butter
¼  cup chopped nuts
 3 tablespoons shredded coconut
2 tablespoons wheat germ
Shredded coconut for coating 
Chock-full of goodness, these coconut-covered morsels are perfect for healthy snacking.
  1. Combine raisins or date pieces with boiling water in a medium-sized mixing bowl. Let soak for 15 minutes. Drain any excess water and return fruit to bowl.
  2. Add molasses or honey, peanut butter, chopped nuts, coconut, and wheat germ. Mix well.
  3. Refrigerate for 15 minutes. Form into 12 balls and roll in additional coconut. Cover and chill for 1 hour before serving.
