Cinnamon Streusel Coffee Cake

Want to wow your guests at your next brunch? This Cinnamon Streusel Coffee Cake, loaded with buttery, cinnamon goodness, never fails to impress. Vegan and gluten-free option!

Ingredients

 2 cups flour (can use 1 cup whole wheat)
 1 cup sugar
 3 teaspoons baking powder
 1 teaspoon salt
  cup butter or vegan buttery sticks, softened (Do not use vegan spread in a tub.)
 1 cup milk, dairy or plant
 2 1/4 teaspoons powdered vegan egg replacer (Available in natural food grocers and online)
 3 tablespoons warm water
Streusel Ingredients
 ½ cup chopped walnuts
  cup packed brown sugar
 ¼ cup flour
 ½ teaspoon ground cinnamon
 3 tablespoons vegan buttery sticks, softened but still firm
Apple Variation
 ¼ cup butter
 ½ cup packed brown sugar
 2 medium apples, thinly sliced

Instructions

Heat oven to 350° F.

Mix streusel until crumbly.

Beat remaining ingredients in large mixing bowl for about 2 minutes, scraping bowl
occasionally.

Spread half of batter in a greased 9×9 pan.

Sprinkle with half of streusel mix.

Repeat layers with remaining batter and streusel.

Bake until wooden toothpick inserted into center comes out clean, about 35-40 minutes.

Apple Variation

In heated oven, melt butter in pan.

Sprinkle with brown sugar.

Arrange apples in pan.

Pour all of batter in pan and top with streusel and bake as above.

Note for vegan and gluten-free options: Can be made vegan by using any non-dairy milk
and a vegan buttery-type stick. Use the sticks and not the spread in tubs. Make it gluten-free by using gluten-free flour or a gluten-free baking mix. If using a baking mix, omit baking
powder and salt.
