Pilaf doesn’t always mean rice. Try this bulgur recipe for a tempting alternative!

Bulgar PIlaf recipe

 1 cup uncooked medium-grain bulgur
 3 tablespoons vegan butter
 2 cups boiling vegetable broth
 1 cup canned whole tomatoes, drained and chopped
 ½ teaspoon salt

In a 2-quart saucepan, sauté uncooked bulgur in a small amount of vegan butter until the grain is slightly browned. Add remaining ingredients and bring to a boil. Cover, reduce heat, and simmer for about 45 minutes.

Note: For a gluten-free option replace quinoa for Bulgur. Cook as directed for 15 minutes. Let sit covered on stove for 10 minutes. Fluff with fork.
