Combine water and elderberries in a non-reactive saucepan (ceramic, enamel, or stainless steel).

Optional ingredients to simmer with elderberries for an added immune boost are ¼ teaspoon cinnamon powder or 1 cinnamon stick and ½ teaspoon turmeric powder.
