banana bread Recipe

CategoryCuisineDiets, , Yield10 Servings

The marvelous flavor of banana permeates this popular cake-like loaf. Spread with cream cheese, fruit butter, or nut butter for a teatime treat or to enjoy any time of the day.

Ingredients

 1 cup whole wheat flour
 1 cup unbleached white flour
 ¾ cup organic granulated sugar
 1 tablespoon baking powder
 ½ teaspoon baking soda
 ½ teaspoon salt
 ¼ cup butter, melted
1 ½ cups mashed ripe banana
¼ cup buttermilk or milk soured with ½ teaspoon lemon juice
 2 teaspoons vanilla extract

Instructions

1

Assemble your ingredients. Preheat oven to 350ᵒ F.

2

In large mixing bowl, sift together flours, sugar, baking powder, baking soda, and salt.

3

In a separate bowl, combine melted butter, mashed banana, buttermilk or soured milk, and vanilla extract. Add to dry ingredients, mixing just until well moistened. Batter should be thick but not dry. Add a little more milk, if needed.

4

Turn at once into a greased 9 x 5-inch loaf pan. Smooth top (dampening your fingers with water will help). Bake for 1 hour or until a toothpick inserted in the top of the loaf comes out clean.

5

Let stand in pan 10 minutes, then remove from pan and place on a wire rack. Let cool completely before slicing.

Note : If using a glass loaf pan, reduce the temperature by 25 degrees to avoid over-browning. Also, start checking it at 50 minutes.
